Prepared from the outside leg muscle. Muscles are trimmed of any trace of cartilage, fat, silver skin and frayed meat. Sliced perpendicularly to the grain of the meat to a thickness between 1/8" and 1/16". Cutlets are portioned and hammered before being transferred to the added value production line. The cutlets are placed one after the other on a belt that passes through the ingredient basin and is coated with the breading.
