Prepared from boneless muscle leg (inside nut, outside sub-nut, top butt and sirloin tip) the muscle for the manufacturing the scallopine are trimmed of all trace of cartilage, fat, silver skin, and frayed meat, sliced perpendicularly toward the meat grain at a thickness between 1/8" and1/16", the scallopine are then portioned at 55g and hammered.
